You want the right ratio of omega 3, 6 and 9. Even omega 5 and 7 fatty acids have a biological role in humans.
The concern about trans fats is really silly. A long chain, conjugated cis fatty acid had the potential to self cyclise into a aromatic (or at least have semi aromicity).
